However, cooking pizza in a home oven can be tricky. Most household ovens don't get hot enough or cook evenly enough to produce authentic pizza restaurant-quality results.

These techniques will level up your home pizza game for crust that's crispy and chewy just like the pros make.

Tip #1: Preheat Your Pizza Stone

Pizza stones are a must-have for home pizza making. 

These thick slabs of ceramic or stone mimic the effects of a commercial pizza oven by absorbing moisture, evenly distributing heat, and crisping up the crust. 

For best results, you need to fully preheat your pizza stone before cooking. 

Place it on the top rack of your oven and crank up the heat to the max (500-550°F if possible) for at least 30 minutes before baking your pizza. 

The hotter the better for getting that crust nicely charred!

Tip #2: Use Low Moisture Mozzarella

Fresh mozzarella tastes amazing, but it can make your homemade pizza soggy. 

The high moisture content in fresh mozz causes it to release water as it melts in the oven, creating a floppy crust. 

For your home oven pies, opt for low moisture shredded mozzarella instead. 

It has a firmer texture and melts without making your crust a sopping mess.

Tip #3: Partially Bake Before Topping

Par-baking, also called blind baking, is a technique used by pizza pros to ensure a crisp crust. 

It involves partially baking your pizza crust before adding toppings. After stretching and saucing your dough, bake it solo on the preheated stone for 2-5 minutes. 

Then pull it out, top it, and return it to the oven to finish cooking. This shortcuts allows moisture from the toppings to evaporate so your crust gets nicely browned and crispy instead of soggy.

Tip #4: Max Out Your Oven Temperature

Crank your oven to the highest temperature possible, ideally 550°F or above. 

Pizza ovens reach extremely high temperatures in order to quickly bake the crust before toppings have a chance to make it soggy. 

While home ovens can't quite replicate those 900°F+ pizza oven temps, maxing out the setting will get you closer to that blistering heat you need for crispy, charred crust at home.

 

Tip #5: Keep the Oven Closed

Pizza ovens use trapped heat and steam to quickly bake pies. 

Opening and closing your oven door repeatedly allows hot air to escape, cooling down your oven temperature. 

For the crispiest home oven crust, keep those doors shut! 

Only open briefly at the last second to slide your pizza in and take it out when done cooking. 

Avoid the urge to continually check its progress. Trust the process and let your pizza bake undisturbed.
